Yesterday I made ratatouille. Traditionally we use eggplants, zucchini, onions, peppers and garlic. For a better taste you want to saute the veggies individually with a lot of olive oil, then put everything together with the garlic, salt, pepper and thyme and let it simmer, YUM! Serve it on a bed of rice et c’est delicieux!
